Wu Kang was a shiftless fellow who changed apprenticeships all the time. One day he decided that he wanted to be an immortal, so he went to live in the mountains where he importuned an immortal to teach him. First the immortal taught him about the herbs used to cure sickness, but after three days his characteristic restlessness returned and Wu Kang asked the immortal to teach him something else. So the immortal taught him chess, but after a short while Wu Kangs enthusiasm again waned. Then Wu Kang was given the books of immortality to study. Of course, Wu Kang became bored within a few days, and asked if they could travel to some new and exciting place. Angered with Wu Kangs impatience, the master banished Wu Kang to the Moon Palace telling him that he must cut down a huge cassia tree before he could return to earth. Though Wu Kang chopped day and night, the magical tree restored itself with each blow, and thus he is up there chopping still.
This report is concerned with the critique and analysis of Key Performance Indicator (KPI) of Gold Coast Resort (GCR) .The analysis part is divided into two main sections regarding to the departmental in GCR which are Room Department and Food and Beverage Department.The major variances and causes of these variances in each department will be discussed.Furthermore, the recommendations will be provided in order to correct those problems and improve the current direction of the GCR.
2 Departmental Analysis
2.1 Room Department
2.1.1 Revenue
The actual figure of GCR in room revenue was lower than the prior year both in the current month and year to date.The variance in the room revenue was unfavorable because the actual revenue was below the budget.The room revenue could not reach the budget because of decreasing in room occupancy rate.
2.1.2 Expenses
There are two main expenses that affected the Room Department Performance which are the Agent Commissions and the Variable Expenses per Occupy Room (POR) .
2.1.3 Room Department Analysis
The possible reason that caused the room revenue was unfavorable is a booking from travel agent.Although the GCR paid less commission to its agents and its variance was favorable, it can be implied that the travel agents might reserve the rooms for their guests in other resorts that they pay more commissions.
The occupancy rate declined, but the expense rose over the budget.Therefore, the property had to spend more money on this expense although it had less guests staying in the resort.The actual figure got closer to the budget regarding to the year to date column.
2.1.4 Recommendation for Room Department
GCR should put an effort to convince the travel agents to book the rooms for their guest at its resort again.GCR should reduce the number of staff when it confronts with the situation that the occupancy rate declines.The property could hire the casual staff rather than the full time staff in order to reduce the payroll, wages and related expenses.However, the GCR has to ensure the staff perform their task effectively and efficiency.GCR should purchase the good quality of guest supplies and make sure that the number of supplies is suitable.
2.2 Food&Beverage department
From the key performance indicators of food and beverage (F&B) department, this department experiences a decrease in its profit during current month (December 2004) compared to the same month in prior year.The same trend can be seen in the whole current year (2009) compared to prior year.
2.2.1 Revenue
Two things contribute to such grow in F&B revenue.Firstly, the number of actual covers in 2009 is the same as its counterpart in 2008 which is also the same as the budget for 2009.Secondly, in the field of average spend breakfast, lunch and dinner (2009) , GCR planned to improve prices of breakfast and lunch, and keep the price of dinner the same as that in 2008.
2.2.2 Expense
On the one hand, higher wages could help improve quality of both F&B product and services.On the other hand, this unfavorable variance of 600 in 2009 indicates that staffs used more than budgeted time to finish a particular job or GCR spend more on wage rate than budget.
2.2.3 Recommendation for F&B department
How can GCR reduce cost of payroll&related wages?They should make good use of the budget for wages to improve quality of products and also labor efficiency.How can we reduce the cost of materials?The consultant analyses available foodstuffs and may recommend changing specifications if a less-expensive item can be substituted without comprising quality.How can we improve revenue of this department?If GCR increases both average spend meals and the number of covers, they could definitely increase our revenue.
3 Conclusion
The possible three reasons that caused the Room Revenue was unfavorable are less booking from travel agent, purchasing too much or unqualified supply, and hiring staff whose number is too large or whose efficiency is low.As to F&B department, higher wages and higher cost of materials lead to the decrease in department profit, although there is slight rise in its revenue.In addition, the decrease of room occupancy causes the decrease of tour activities at the same time.And large numbers of employees also is one reason for causing profit decrease.
In order to deal with these problems, the following recommendations should be suggested to the top of GCR.In term of room department, there are three methods.Firstly, the GCR should convince the travel agents to book the rooms for their guest at its resort again.Secondly, the GCR should reduce the number of staff when occupancy rate declines.Thirdly, the GCR should purchase the good quality of guest supplies and make sure that the number of supplies is suitable.In term of F&B department, it is suggested as follow: (1) GCR should make good use of the budget for wages to improve quality of products and also labor efficiency. (2) GCR should delegate an independent consultant who can analyses and monitor material purchasing process. (3) Renewing items in menus and cooperating with other department in the resort are also suggested.
